As a kid, I had always envisioned hosting dinner parties at my place and after traveling the world, that yearning only grew more intense as I learned of various cooking techniques and indulged in worldly cuisines 🍯. Last weekend for my birthday we had some friends over and I spent my entire Saturday cooking and cleaning in preparation. We’re talking 9am-7pm, but I loved every minute of it 🤩!I’ve always challenged myself with crafting different dishes and desserts, and when friends and family would say, “Cassie don’t make something that complicated, do something easy”, I’d never listen and instead, would push the envelope (what else is new lol) 😎. Sometimes I fail, sometimes I succeed, but cooking and entertaining is my therapy 🙏🏼.On the menu this past weekend;
- 🥒Spicy cucumber margaritas with a chamoy/tajin rim
- 🌹Rose Spritz
- 🍊Classic Old Fashioned
- 🌽Polenta bites with goat cheese, butternut squash bruschetta, drizzled with honey and crushed walnuts
- 🥩Beef Tartare with pita crisps and truffle aioli (slicing that meat thin enough took ages 😂)
- 🌱Roasted veggie salad with asparagus, corn, red onion, zucchini squash and a lemon basil vinaigrette
- 🍷Cabernet
- 🍕Red/Pesto Pizza with burrata, basil and German prosciutto
- 🍕White Pizza with peaches, arugula, bacon, goat, feta and ricotta parm🎂And for dessert… a rose, cardamom, pistachio cake with a rose cream cheese frosting and edible flowers 🌸😋I’m loving cooking and hosting these days especially with my new gifted dining table set from @industrywest. I’ve got the gorgeous rustic oak Arbor Dining Table and smooth leather Marseille Chairs. So chic, so rustic, so sophisticated, and the final touches to our humble abode 🥹♥️Wearing @revolve 💃🏼

Our last hike in Banff consisted of this 4.2 mile

Our last hike in Banff consisted of this 4.2 mile route with tons of switchbacks through and around Tunnel mountain. It was an incredible hike through a fairy-tale like, mossy forest with open fields and sweeping views of incredible mountain-scapes. 🏔As beautiful as it was, we also had to keep a keen eye for bears and elk the whole time. We were hiking during calving season where mother elks can be aggressive and charge at you if you come across mother and her baby. Unfortunately (yet also lucky because they’re such beautiful creatures) for us, towards the end of our hike, we came face-to-face with a mother and her baby, and were lucky enough to steer the course and create distance, but it was definitely adrenaline-inducing 🦌.Nature is wild and exhilarating, I missed being fully immersed in her, in all her glory 🌲
